If you want light grout use white thinset.
The light gray is also a fine choice but keep in mind that it will darken and maybe not match the tile color quite as well over time.

White grout is a risk in bathrooms though as everyone mentions.
I have never seen white marble turn that grey from water before though.
If it does turn white again and you seal it you are still going to have water penetrate the marble along all the edges through the grout.

Also after installation continue to seal your stone at least one time a year to prevent future staining.

Do not use any grey mud or thinset that can penetrate through to the light stone.

In conclusion ensure if you re going to install white marble or light stone use a white colored thinset and portland cement or waterproof system.
Slate tile is typically less porous than travertine and has a dark colored body.
You can also choose the color based on location.
